Recipe: Pork Loin Roast

I have two recent successes at nearly effortlessly transforming hunks of tough, dry meat into delicious entrees under my belt. With some long-term time constraints likely coming in the intermediate-term, I've had my antennae out for similar crock pot recipes.
The latest of these is a pork roast with sweet potatoes, my version of which you will find below. The whole family likes this one. I skip peeling the sweet potatoes, which are my favorite part of this meal. Serve with salad or green beans and be sure to add some of the juice to the pork on serving.

Pork Loin Roast With Sweet Potatoes
Preparation Time is 20 minutes to set up, 7 hours to cook..
Ingredients
- sweet potatoes, 2-3 medium-sized
- brown sugar, 3 tbsp
- butter, 3 tbsp
- pork rub, 1 tbsp
- Chinese five-spice powder, 1/4 tsp
- pork loin roast, 3 lbs.
- salt, 1/2 tsp
- pepper, 1/2 tsp
- Cut sweet potatoes into bite-sized chunks and place into bottom of crock pot.
- Layer brown sugar and butter over sweet potato bed.
- Mix pork rub and five-spice powder together.
- Rub spice mixture over pork loin and set pork loin on top of sweet potatoes.
- Cook on low heat for 7 hours.
- Check internal meat temperature over 145 F.
- If meat below 145 F, cook on high for another 45 minutes.
1. Do not add water to the cooker.
